How do we measure the health of our food? How do we know which blueberry we see at the store is healthier? Which is tastier? Are both of these things connected?
Right now we tell consumers about the certifications achieved, and the practices done or not done in growing food. This is better than nothing, but we need far better metrics to explain the big difference that a life-giving soil microbiome provides to the food grown in it.
Fear not -- there are many people working on that and someday soon, it is likely we will be able to know this difference even before taking a bite.
